Garlic Mac and Cheese

  • 220 g macaroni or other pasta - uncooked weight
  • 1 tbsp minced garlic - heaping
  • 300 mL skim milk
  • 160 g light cream cheese - Philadelphia or similar
  • 1 tsp salt (≈6 g) - or to taste
  • ½ tsp black pepper (≈1 g)
  • 1 tsp smoked paprika (≈3 g)
  • ½ tsp ground nutmeg (≈1 g)
  • 100 g low-fat cheddar cheese - or another low-fat cheese, grated

Instructions

  1. Bring a pot of salted water to a boil. Cook the pasta until al dente according to the package directions. Reserve a little pasta water, then drain.
  2. While the pasta cooks, add the minced garlic and milk to a large pan. Warm gently over medium-low heat, stirring often, without letting the milk boil hard.
  3. Add the light cream cheese, salt, black pepper, smoked paprika, and nutmeg. Whisk until the cream cheese has melted and the sauce is smooth.
  4. Reduce the heat to low and add the grated cheddar. Stir until melted.
  5. Add the drained pasta and stir until evenly coated. If the sauce is too thick, loosen it with a small splash of reserved pasta water. Taste and adjust the salt before serving.
