Garlic Mac and Cheese

Instructions
- Bring a pot of salted water to a boil. Cook the pasta until al dente according to the package directions. Reserve a little pasta water, then drain.
- While the pasta cooks, add the minced garlic and milk to a large pan. Warm gently over medium-low heat, stirring often, without letting the milk boil hard.
- Add the light cream cheese, salt, black pepper, smoked paprika, and nutmeg. Whisk until the cream cheese has melted and the sauce is smooth.
- Reduce the heat to low and add the grated cheddar. Stir until melted.
- Add the drained pasta and stir until evenly coated. If the sauce is too thick, loosen it with a small splash of reserved pasta water. Taste and adjust the salt before serving.
Notes
- The nutmeg deepens the cheese flavor without tasting sweet; don’t skip it.
