The Best Dinner Rolls

  • 4-5 cups all-purpose flour (≈480 g)
  • 2 tbsp rapid rise / instant yeast (≈18 g)
  • ⅓ cup granulated sugar (≈67 g)
  • 1 tsp salt (≈6 g)
  • 1½ cups warm milk (≈355 mL) - 110°F / 43°C
  • 5 tbsp butter (≈71 g) - softened
  • 1 egg - room temperature
  • 2 tbsp melted butter (≈28 g) - for brushing

Instructions

  1. Combine flour, yeast, sugar, salt, warm milk, softened butter, and egg in the bowl of a stand mixer.
  2. Attach the dough hook and mix on the lowest speed until flour is incorporated, scraping down the sides as needed.
  3. Increase speed to medium and beat for 2 minutes.
  4. Add ½ cup flour and mix until incorporated. Add another ½ cup flour and repeat, mixing at medium speed for 2 minutes until a ball of dough forms.
  5. Add additional flour as necessary. The dough should be slightly sticky and soft, pulling away from the edge of the bowl.
  6. Transfer the dough to a lightly greased bowl, cover with a towel or plastic wrap, and let rise for 30 minutes at room temperature.
  7. Punch down the dough lightly to deflate.
  8. Pinch off pieces and form 24 rolls (about 2 oz / 57 g each).
  9. Place rolls on a lightly greased quarter baking sheet or 9×13 baking dish. Cover and let rise for an additional 30 minutes at room temperature.
  10. Preheat oven to 375°F (190°C).
  11. Bake for 12-15 minutes or until golden brown and cooked through. Tent with foil if rolls begin to brown too quickly.
  12. Remove from oven and brush hot rolls with melted butter. Serve immediately.
