Vegan Coffee Cake

    1¼ cups unsweetened soy milk (≈300 mL)
  • 1 tbsp apple cider vinegar (≈15 mL)
  • 3 cups all-purpose flour (≈360 g)
  • 1 tbsp baking powder (≈14 g)
  • ½ tsp salt (≈3 g)
  • 1 cup granulated sugar (≈200 g)
  • ½ cup canola oil (≈108 g) - or melted coconut or avocado oil
  • ½ cup unsweetened applesauce (≈122 g)
  • 2 tsp vanilla extract (≈9 g)
  • Cinnamon Streusel

    1½ cups brown sugar (≈330 g)
  • 1 tbsp cinnamon (≈8 g)
  • Topping

    2 tbsp vegan butter (≈28 g) - melted

Instructions

  1. Preheat the oven to 350°F and lightly grease a 9x13-inch cake pan.
  2. Combine the soy milk and apple cider vinegar and set aside.
  3. In a large bowl, mix the flour, baking powder, salt, and sugar.
  4. Add the milk mixture, oil, applesauce, and vanilla to the dry ingredients and stir until combined.
  5. Pour half the batter into the prepared pan.
  6. Mix the brown sugar and cinnamon for the streusel.
  7. Sprinkle half the streusel over the batter, then add the remaining batter.
  8. Top with the remaining streusel and drizzle with the melted vegan butter.
  9. Bake 40-45 minutes, until a toothpick inserted in the center comes out clean.
