Cilantro Lime Chicken Thighs

  • For the chicken and marinade

    1 pack boneless skinless chicken thighs (≈900 g) - Costco pack, roughly 2-2.5 lb / 900-1100 g
  • 1 tbsp fresh lime juice (≈15 g) - about 1/2-1 lime
  • ½ lime - zested
  • 1 tsp olive oil (≈5 g) - helps the spices stick
  • 2 cloves garlic (≈6 g) - minced
  • ¾ tsp kosher salt (≈5 g)
  • ½ tsp black pepper (≈1 g)
  • 1 tsp ground cumin (≈2 g)
  • 1 tsp chili powder (≈3 g)
  • ½ tsp smoked paprika (≈1 g)
  • ½ tsp dried oregano (≈1 g)
  • ¼ tsp onion powder (≈1 g)
  • 1 pinch cayenne
  • 1 tbsp chopped fresh cilantro (≈1 g)
  • To finish

    Fresh lime juice - to taste
  • Chopped fresh cilantro - to taste

Instructions

  1. Stir together all the marinade ingredients.
  2. Toss the chicken thighs in the marinade, cover, and refrigerate 1-2 hours (45 minutes if you’re short on time).
  3. Heat a skillet over medium-high and arrange the chicken in a single layer, in batches as needed.
  4. Cook 5-6 minutes, flip, and cook another 4-6 minutes, until the thickest part reaches 175-185°F (79-85°C).
  5. Finish with a squeeze of lime and chopped cilantro.
