Soy Honey Garlic Chicken

  • 2 chicken breasts (≈340 g) - sliced into thin strips
  • 1 tsp oil (≈5 g)
  • 2 tbsp soy sauce (≈32 g)
  • 1 tbsp rice vinegar or lime/lemon juice (≈15 g)
  • 1-2 tsp honey or brown sugar (≈7 g)
  • 1 tsp garlic powder (≈3 g) - or 2 cloves fresh garlic, minced
  • ½ tsp ground ginger - optional but great
  • ½ tsp black pepper (≈1 g)
  • red pepper flakes or sriracha - pinch, optional
  • 1 tsp cornstarch - mixed with 1 tbsp cold water, optional for a glossy sauce

Instructions

  1. Whisk together all the sauce ingredients (everything except the chicken, oil, and cornstarch). If using cornstarch, stir it into the cold water separately.
  2. Heat the oil in a large skillet over medium-high. Cook the chicken strips in a single layer, turning, 4-6 minutes until browned and cooked through.
  3. Pour in the sauce, toss to coat, and simmer 1-2 minutes. If using the slurry, add it now and cook about 30 seconds until glossy.
  4. Serve over rice or alongside vegetables.
