servings
  • 225-300 g mushrooms - baby bella/cremini work especially well
  • 1 tsp olive oil - or cooking spray
  • 1 tsp Worcestershire sauce - optional, but highly recommended
  • 2 cloves garlic - minced
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • ¼ tsp smoked paprika
  • ¼ tsp black pepper
  • ¼ tsp kosher salt - adjust to taste
  • 1 tsp fresh lemon juice
  • 1 tbsp chopped parsley

Instructions

  1. Slice the mushrooms into ¼-inch slices.
  2. Heat a skillet over medium-high heat.
  3. Add the oil, then the mushrooms in a single layer.
  4. Leave them alone for 3-4 minutes so they brown instead of steaming.
  5. Stir and cook another 3-4 minutes until most of the moisture has evaporated.
  6. Add the garlic and all the seasonings. Cook about 1 minute until the garlic is fragrant.
  7. Stir in the Worcestershire sauce and cook another 30-60 seconds until it coats the mushrooms.
  8. Remove from heat and finish with a squeeze of lemon juice and parsley if using.
