Mexican Street Corn (Esquites)

Instructions
- Heat a cast iron skillet over high heat. Cook the drained corn 8-10 minutes, stirring occasionally, until lightly charred.
- Off the heat, stir in the butter and a pinch of salt.
- Transfer to a bowl and stir in the mayonnaise, lime juice, and 1 teaspoon of the chili powder.
- Top with cotija, the remaining chili powder, and cilantro.
- Serve warm or at room temperature.
Notes
- Fresh corn works too: grill husked cobs until charred, cut off the kernels, and proceed.
- No cotija? Feta, queso fresco, or Parmesan all work.
- Keeps 3 days in the fridge; a splash of lime juice freshens up leftovers.
